(makes 8-10 mini pancakes - breakfast for 2)
* Pancakes are deliberately barely sweetened so as to account for lots of maple syrup!
1.5 tbsp butter, melted
2/3 cup flour
1 tsp baking powder
1/4 tsp salt
2 tsp brown sugar*
1/2 tsp cinnamon
1/2 cup milk
2-3 tsp coconut oil
* Optional: 2 tbsp of chocolate chips of choice, or tbsp blueberries, or both!
Use a mixer to combine the ingredients. If the mix is too runny, add a little more flour so it has the consistency of a thick sauce.
Fold in the blueberries and/or chocolate chips.
Heat 1 tsp coconut oil in a frying pan.
Use a tablespoon to portion one heaping dollop of the mix for a mini pancake.
Flip and fry until golden on both sides.
Add more coconut oil as needed, and continue with the remaining batter.
Pour maple syrup over the pancakes, and enjoy with whipped cream and fresh fruit.
