500g pasta of choice
200g frozen peas
2 onions, chopped
2 garlic cloves, minced
2 zucchinis, diced
1/4 cup white wine
200ml vegetable stock
100g ground pistachios
100g feta, crumbled
1/2 cup grated hard yellow cheese of choice
2 tsp dried spearmint
2 tbsp chopped dill
olive oil, salt, pepper
method:
Cook pasta as per packet instructions along with the peas.
Meanwhile, in a pan fry the onion, zucchini, and garlic in a little olive oil on high heat. Extinguish with the wine. Once the alcohol evaporates, add the stock, pistachios, and feta. Lower heat a little and mix 3-4 min until there is a creamy sauce. Add the parmesan, dill, spearmint, 2 tbsp olive oil, and the pasta and peas. Season with pepper and salt to taste.
