ingredients:
(serves 4-6)
1 onion, chopped
1 leek, chopped
1 celery stick, chopped
2 potatoes, diced
800g frozen broccoli
2 tbsp butter
800ml vegetable stock
100g cheddar cheese, grated
100g cream cheese
2 tsp thyme
salt, pepper
* Optional: 1/2 tsp chilli flakes
method:
Fry onions until soft. Add celery, leek, potatoes, thyme and butter. Cook, covered, 5 min.
Extinguish with a little of the vegetable stock, and scrape off anything stuck to the bottom of the pot, then pour the rest of the stock in. Add the broccoli and bring to a simmer, 15 min.
Use a blender to blitz the soup to the desired consistency.
Add the cream cheese and grated cheddar and mix well until combined.
Season with salt and pepper.
Optional: sprinkle with a pinch of chilli flakes.
