For the zucchini tots:
1kg zucchini, finely grated, excess liquids squeezed out
1.5 cups grated dry yellow cheese of choice
1 cup breadcrumbs
2 eggs
2 tsp oregano
1/2 tsp spearmint
1/2 tsp dried basil
1/2 tsp rosemary
salt, pepper, olive oil
For the marinara sauce:
2 garlic cloves, minced
250g tomato sauce
100ml water
1tsp vegetable stock powder
2 tbsp fresh chopped basil
method:
Heat oven to 200°C.
Place the zucchini in a bowl, and add one by one while mixing: the cheese, breadcrumbs, egg, seasoning, 1 tsp salt, and some pepper. Once well combined, shape small balls out of the mix, the size of 1/2 tsp, and layer them on a baking tray. Drizzle with a little olive oil and bake in the oven for 20 min. Then turn each of the tots over and bake another 10 min.
Meanwhile, make the sauce by frying the garlic in a little olive oil in a small pan. Then add the tomato sauce, water, stock powder, 1/3 tsp salt, some pepper, and the basil, and simmer until reduced by half and a thick sauce remains.
Enjoy the tots with the marinara sauce.
