pecan & sesame biscuits

ingredients:

(makes ca. 24-30)

  • 80g butter, room temp

  • 1/3 cup icing sugar

  • 1 tsp vanilla paste

  • 1 egg

  • 1/2 cup all-purpose flour

  • 1/2 cup rye flour

  • 1/4 tsp salt

  • 1/2 tsp baking powder

  • 1/2 cup pecans

  • 2 tsp brown sugar

  • 2 tsp sesame seeds

* Optional: 2 tsp chia seeds or poppy seeds


method:

Beat butter, icing sugar, and vanilla. Add the egg and combine.

Pulse the pecans, add them to the mix along with both flours, salt, and baking powder.

Stretch or roll out the dough into a long sheet, roughly 10cm wide and 1/2 cm thick. Wrap in aluminium foil and refrigerate at least 2 hours.

Heat oven to 175°C.

Sprinkle brown sugar and sesame seeds over the unwrapped dough. Cut the dough into squares or 1/2cm thick strips for finger biscuits, and set on a tray lined with baking paper.

Bake 15-20 min until golden/light brown.
