pasta with a simple tomato-onion sauce

250g pasta of choice
4 tbsp olive oil
300ml vegetable stock
400g can chopped tomatoes
1 onion, finely diced
½ tsp oregano
½ tsp thyme
½ tsp sugar
1 tbsp butter
2 tbsp fresh or frozen chopped basil
* Optional: hard yellow cheese of choice, grated
Fry onion in olive oil until soft. Extinguish with stock, mix in tomatoes and seasoning (only add a little salt at the start). Leave uncovered and boil 10 min, until sauce is thick (reduced by more than half).
Meanwhile, boil the pasta according to the packet instructions.
Remove sauce from heat and add the basil and butter. Taste and season to desired saltiness.
Drain pasta, serve with sauce on top and sprinkle on grated cheese if using.
