pasta with a simple tomato-onion sauce

ingredients:

(serves 2-3)

  • 250g pasta of choice

  • 4 tbsp olive oil

  • 300ml vegetable stock

  • 400g can chopped tomatoes

  • 1 onion, finely diced

  • ½ tsp oregano

  • ½ tsp thyme

  • ½ tsp sugar

  • Salt, pepper

  • 1 tbsp butter

  • 2 tbsp fresh or frozen chopped basil

* Optional: hard yellow cheese of choice, grated


method:

Fry onion in olive oil until soft. Extinguish with stock, mix in tomatoes and seasoning (only add a little salt at the start). Leave uncovered and boil 10 min, until sauce is thick (reduced by more than half).

Meanwhile, boil the pasta 2 min less than the packet instructions. Drain and add the pasta to the sauce.

Remove sauce pot from heat and cover with lid, allowing the pasta to cook the remaining 2 min in the sauce.

Add the basil and butter. Taste and season to desired saltiness.

Sprinkle on grated cheese if using.
