apple crumble squares

ingredients:

(makes 10 -12 squares)


For the crust:

  • 75g butter, melted

  • 2 tbsp sugar

  • 1 tsp vanilla paste

  • 1/4 tsp salt

  • 1 cup flour

For the filling:

  • 1 apple, diced

  • 1 tsp cinnamon

  • juice from 1 lemon (minus 1 tbsp reserved for the icing)

For the crumb topping:

  • 4 tbsp butter, chilled

  • 1/3 cup flour

  • 1/4 cup brown sugar

  • pinch of salt

For the glaze:

  • 1 tbsp lemon juice

  • 2-3tbsp icing sugar


method:

Preheat oven to 180°C. Line a loaf tin with aluminium foil.

For the crumb topping: Use a food processor to combine the ingredients - the result should be small lumps of crumble dough. Place in fridge until needed.

For the crust: stir together all the ingredients and press the dough into a single thin layer in the loaf tin. Bake 10min.

Meanwhile, combine the filling ingredients in a bowl. Once bottom cake layer has baked, remove the tin from the oven, and layer first the apples on top, followed by the crumble topping. Bake 25min.

For the glaze, combine the lemon juice with the icing sugar.

Allow the cake to cool a little before removing the aluminium foil from the tin, and setting it on a plate. Wait until cake has cooled before drizzling over the glaze. One glaze has dried, cut the cake into small squares.
