450g prawns
400g kritharaki
2 onions, diced
2 leeks, sliced
2 fennels, diced
2 garlic cloves, minced
1/3 cup ouzo
400g tomato sauce
1.5l litres vegetable stock
2 tbsp chopped parsley
2 whole spice
2 tbsp butter
salt, pepper, olive oil
method:
Heat oven to 190°C.
Heat a little olive oil in a crock pot and fry the onions, garlic, leeks, and fennel, until softened. Extinguish with the ouzo and allow it to evaporate almost entirely before adding the kritharaki and some more olive oil. When the pasta starts to stick to the bottom of the pot, pour in the stock and tomato sauce, and add the whole spice, parsley, prawns, 1 tsp salt and some pepper. Mix well, cover pot with lid and place in the oven for 45 min.
Remove from the oven, and the butter and some more (1 tsp) salt and pepper.
