cajun chicken salad

ingredients:

(serves 2)

  • 2 large chicken breasts, each cut into 3-4 pieces

  • 4 tbsp olive oil

For the Cajun Mix:

  • 1/2 tsp ground cumin

  • 1/2 tsp ground coriander

  • 1/2 tsp oregano

  • 1/2 tsp thyme

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp paprika

  • 1 tsp Cayenne pepper

  • 1/4 tsp curcuma

For the Salad:

  • 1 small can corn, 150g

  • 2 large tomatoes, seeded and finely diced

  • 1 shallot, finely diced

  • 1/2 lettuce, shredded

* Optional: 1/2 avocado


For the Dressing:

  • 1 tbsp coriander, chopped

  • juice from 1/2 lime

  • 2 tsp sugar

  • 4 tbsp olive oil

  • 1/4 tsp salt

  • 1/4 tsp pepper


method:

Combine cajun seasoning.

Coat chicken in olive oil and then in the seasoning. Grill on high heat for 6 min on one side, then turn down heat to medium and flip chicken, grilling 8 more min.

Meanwhile, combine salad ingredients in a bowl.

Combine dressing in a jar, mix well, and coat salad in it.

Serve with chicken on top, and sliced avocado if using.
