caramel apple muffins

(makes 12 muffins)

  • 100g butter, melted

  • 2 eggs

  • 100ml milk

  • 150ml cream

  • 300g flour

  • 1 tbsp baking powder

  • 40g caster sugar

  • 40g brown sugar, plus 6 tsp for sprinkling on top

  • 1/2 tsp salt

  • 2 tsp cinnamon

  • 1/4 tsp ground clove

  • 150g caramel drops (or salted caramel drops)

  • 1 apple, peeled, cored and finely diced (ca. 1 cup)


Preheat oven to 180°C.

Whisk eggs until well-beaten. Add milk and cream, and mix to combine.

Using a spoon (or a mixer), mix in the flour and baking powder.

Poor in the melted butter and mix.

Add the sugars, salt and all the spices. Add the caramel and apple.

Spoon into a muffin tray lined with paper liners. Sprinkle generously with brown sugar and bake 30 min.

Cool on a wire rack.
