1/2 cup rice, couscous, quinoa or mix of these
4 slices bacon, chopped
1 chicken or turkey schnitzel
200g mushrooms, sliced
2 tbsp parsley
juice from 1/2 lemon
1 tsp grated lemon zest
1/2 cup chopped nuts of choice
1 onion, chopped
2 tbsp corinth raisins
1 tsp paprika
salt, pepper, olive oil
method:
Heat a little olive oil in a pan. Season schnitzel with the paprika, salt, and pepper. Fry for 3 min on each side, then lower the heat and cover with lid, cooking for 10 min.
Meanwhile bring 1 cup water to a simmer in a pot. Add a little salt and the rice. Lower heat and simmer, covered, 10 min. Remove from heat, give the rice a little mix, and then cover the pot with a dishcloth and place the lid on top.
Remove the chicken from the pan and add the mushrooms, bacon, nuts, and onion.
Dice the chicken and return it to the pan.
Add the lemon juice and zest to the rice. Mix in the parsley and the corinth raisins.
Add rice to the frying pan and mix well.
Season to taste with salt and pepper.
