chicken teriyaki noodles

ingredients:

(serves 2)

  • 250g chicken or turkey strips

  • 150g noodles

  • 200g seasonal veggies of choices for cooking

  • Optional: 1 tsp sesame seeds, toasted

For the teriyaki sauce:

  • 1/4 cup sake *

  • 1/8 cup mirin (Japanese wine) *

  • 1/8 cup soy sauce

  • 1/8 tsp garlic powder

  • 1/4 tsp salt

* Alternately, use white wine instead


method:

In a bowl add the chicken and season with salt, pepper and olive oil.

In a large frying pan, heat a little oil and fry the chicken until cooked on all sides. Lower heat and cover with lid for 5 min. Uncover the chicken, return to high heat, and extinguish with the sake and mirin. Allow for the alcohol to evaporating before pouring in the soy sauce, garlic powder, and salt. Turn down heat to a light simmer.

Meanwhile, bring a pot of water to a simmer, and add the veggies. Add a little salt and simmer, covered. After 5 min, add the noodles. Drain, and add the noodles and veggies to the teriyaki chicken. Mix so everything is well-coated. Season with black pepper, and leave in pan for a few min so the noodles soak up the sauce.

Sprinkle sesame seeds on top.
