400g king prawns
300g kritharaki
200g tomato sauce
1 garlic clove, crushed
1/3 small chilli, finely chopped
1 tbsp parsley, chopped
3 tbsp lemon juice
olive oil, salt, pepper
500ml vegetable stock
method:
Boil kritharaki in a pot for 8 min, then drain.
Meanwhile heat a little olive oil in a pan or casserole, and fry garlic and chilli. Once aromatic, add stock and tomato sauce, and bring to a simmer. Add kritharaki, prawns, season with salt and pepper. Allow kritharaki to drink up most of the sauce, ca. 5 min, before removing from heat. Add lemon juice, parsley, and season to taste with salt and pepper.
