20-24 lady fingers
80g dark chocolate couverture
1/3 cup milk
1 tsp vanilla paste
pinch of salt
3-4tbsp dark chocolate chips or chocolate shavings
Separate egg yolk from white. Using an electric whisk, mix the egg yolk and vanilla paste until the mixture lightens, ca. 1 min. Add the mascarpone and set aside.
Sprinkle a pinch of salt over the egg white, and add the sugar. Whisk until stiff.
Combine egg whites with yolk-mascarpone mix, and set aside in the fridge until needed.
Melt chocolate in a bowl over a pot of simmering water. Add the milk and mix well.
Soak the ladyfingers in the chocolate milk, and then start to layer in selected tray (or individual glasses). Spoon half the mascarpone mix on top and then sprinkle with half the chocolate chips. Repeat with a second layer of everything.
Place the tiramisu in the fridge for at least 2h before serving.
