cod & veggie casserole

  • 400g cod filet

  • 1 onion, sliced

  • 1 large carrot, sliced

  • 2 large potatoes, sliced

  • 2 tomatoes, diced

  • 2 tbsp chopped dill

  • salt, pepper

  • juice from 1/2 lemon

  • 50ml olive oil


Combine vegetables, and season with salt, pepper and 1 tbsp dill.

Place vegetables in a casserole or wide pan and spread them out into as single a layer as possible. Add the tomatoes also and and pour in 250ml (1 cup) water.

Bring to a simmer and cover, 15 min.

Season cod with salt, pepper, and the remaining dill, and layer it on top of the veggies. Pour lemon juice over casserole contents, and drizzle generously with olive oil. Cover pot again and simmer for 20 min.
