cod with fennel & greens

ingredients:

(serves 2)

  • 100g peas

  • 100g runner beans

  • 1/2 fennel, sliced thinly

  • 1/2 onion, chopped

  • 1 small carrot, grated

  • 400g cod filet or other white fish

  • 100ml white wine

  • salt, pepper, olive oil


method:

Boil peas and runner beans for 10 min, drain and set aside.

Heat ca. 4 tbsp olive oil in a large pan.

Fry the cod for 3 min on each side, then set aside on a plate.

Add the onion, fennel and carrot to the pan, and fry for 2-3min.

Add the drained green veggies to the pan, and season with salt and pepper. Mix well, and layer fish on top of the vegetables.

Extinguish with wine and allow the food to cook for 2 min. Lower heat and cover with lid, simmer for 5 min.

Sprinkle with dill and serve.
