1 onion, chopped
1 garlic clove, minced
400g chopped tomatoes
2 tbsp chopped basil
375ml vegetable stock
2 tbsp butter
2 tbsp flour
250ml milk
250g fresh tortellini of choice
salt, pepper, olive oil
method:
Heat oil in a pot. Fry onion until soft and add the garlic. Once aromatic, add the tomatoes, stock, and basil, and simmer for 20 min, covered.
Meanwhile, make a roux by melting the butter in a small pot, whisking in the flour, and the pouring in the milk while constantly whisking so it thickens without lumps. Remove from heat and set aside.
Remove soup from heat and blitz until smooth. Return to heat and add roux. Cover the soup again and simmer 10 min.
Add salt (ca. 1 tsp) and pepper, then add the tortellini, and simmer for the duration instructed on the packet.
