fried potatoes & mushrooms

(serves 4)

  • 4-6 potatoes, diced

  • 1 tsp paprika

  • 1 tsp rosemary

  • 1 red bell pepper, diced

  • 1 onion, chopped

  • 2 garlic cloves, pressed

  • 400g mushrooms, sliced

  • 2 tbsp chopped parsley

  • grated zest of 1/4 lemon

  • 1 tbsp lemon juice

  • salt, pepper, olive oil


Heat oil in pan.

Season potatoes with salt, pepper, and the paprika. Fry them for 10-15 min, until mostly soft inside.

Add the bell pepper and onion.

When onion is translucent, add the garlic and mushrooms. Mix well, and fry for another 5 min, allowing for the juices to evaporate.

Add grated lemon zest, parsley, and lemon juice. Mix well and season to taste with additional salt and pepper if needed.
