greek herb & olive pasta

500g pasta of choice
2 onions, chopped
3 garlic cloves, minced
150g black pitted olives, halved or sliced
400g tomato sauce
1 cup vegetable stock
2 tsp chopped dill
2 tsp spearmint, or oregano
2 tbsp butter
olive oil, salt, pepper
Hard yellow cheese of choice, for grating
Cook pasta according to packet instructions.
Meanwhile, heat some olive oil in a saucepan and fry onion. Once translucent, add garlic and olives. After about half a minute, pour in the tomato sauce and vegetable stock, season with 1/2 tsp salt and a little pepper, and simmer for 10 min, uncovered.
Remove from heat. Add the herbs and butter, and season to taste with salt and pepper.
Add the pasta and mix so that it is evenly coated and combined.
Serve with grated cheese on top.
