greek pea-&-potato stew ('arakas')

2 onions, chopped
2 carrots, chopped
2-3 large potatoes, diced
10 tbsp olive oil
200g tomato sauce
1 cup water
2 tbsp fresh chopped dill
* Optional: crumbled feta
Heat 4 tbsp olive oil and fry onions until soft.
Add carrots and potatoes, and fry for a few min before adding the tomato sauce and water. Boil on medium-high heat, uncovered, 20 min.
Add peas, dill, 4 tbsp olive oil, and season with salt and pepper. Lower heat and simmer 10 min.
Cover, and simmer 5 min more.
Remove from heat. Season to taste with salt and pepper.
Add remaining 2 tbsp olive oil, and serve with bread.
