'light' turkey lasagne

18-20 lasagne noodles (for a baking dish where 6 noodles side by side would cover the base of the dish)
800g ground turkey
olive oil, salt, pepper
3 carrots, finely grated
1 tbsp chopped parsley
1 onion, finely diced
3 garlic cloves, minced
1 tsp rosemary
200ml red wine
250ml (1 cup) poultry stock
250ml (1 cup) vegetable stock
1/2 - 1 tsp chili flakes
400g tomato sauce
100g grated hard yellow cheese
100g grated mozzarella
1 tbsp butter
Fry onion in a little olive oil on medium-high heat in a large pan, and once translucent add the garlic.
After 20-30 sec, add the ground turkey.
Continue to mix and break up the mince as it cooks.
Once all the liquids have evaporated, add the carrots and parsley, and extinguish with the wine.
Add the rosemary and chili, and allow most of the wine to evaporate before pouring in all the stock.
Add the tomato sauce, and cook uncovered for 10-15min. There should be more sauce in the pan than with a bolognese sauce.
Remove the pan from heat, and mix in half the grated mozzarella and half the grated hard yellow cheese of choice. Season to taste with salt and pepper, and set aside.
Heat oven to 180°C.
In a small saucepan or pot, proceed to make a roux: melt the butter and sprinkle the flour over it. Pour in a little bit of milk and use a whisk to smooth out the lumps, while adding more milk bit by bit. Season with a little salt (ca. 1/2 tsp) and pepper, and remove from heat once thick. Mix in the ricotta and set aside.
Grease a lasagne baking dish with a little olive oil.
Arrange one layer of lasagne noodles at the base (ca. 6), then spoon half the meat and spread it over the noodles. Next place a second lasagne noodle layer on top of the meat, and spoon the remaining half of the meat over it. If in this step you notice that the meat sauce reduced too much after all, pour some water over the dish (1/2 cup - 1 cup).
Add the final layer of lasagne noodles on top, and spoon the ricotta cheese mix over it.
Sprinkle the remaining grated cheese on top of this, and bake 20-25 min.
