no-bake trifle with greek yoghurt whipped cream & fruit
125g digestive biscuits, blitzed
1 tbsp butter, melted
4 tbsp icing sugar
200g greek yoghurt
250g diced fruit of choice (suggest strawberries, raspberries, mango, kiwi)
Combine ground biscuits and butter. Set aside.
Whisk cream with icing sugar until stiff, then fold in the greek yoghurt.
Layer 4-6 glasses with layers of biscuit crumble, greek yoghurt whipped cream and fruit - I suggest 3tsp biscuit base, 3 heaping tsp yoghurt, chopped fruit, 3 heaping tsp yoghurt again and finishing with the biscuit crumble on top.
Refrigerate until eating time!
