1 onion, diced
250g ground beef
1 garlic clove, minced
1 tsp oregano
125ml red wine (1/2 cup)
400g chopped or pureed tomatoes
500ml vegetable stock
1/4 tsp sugar
200g kritharaki or orzo (1 cup)
1-2 tbsp chopped fresh parsley
salt, pepper, olive oil
method:
Heat olive oil in a deep pan and sauté the onion until translucent.
Turn up the heat and fry the beef until it is brown.
Add the garlic and, once aromatic, extinguish with the wine. Allow the alcohol to cook off before adding the oregano, tomatoes, stock, sugar, salt (ca. 1 tsp), and some pepper. Simmer, covered, 10min.
Add the kritharaki and simmer, covered, 15min - mixing every 3-5min (if it needs more liquids, add 100ml water at a time, so as not to add too much).
Add the parsley, season to taste, and remove from heat. Allow it to sit for 10min so it absorbs more of the remaining liquids.
