ingredients:

(serves 4-6)

  • 1 onion

  • 1 garlic clove

  • 1 red chilli

  • 2 tbsp olive oil

  • 800g diced tomatoes

  • 1 cup vegetable stock

  • 500g penne pasta

  • 1 tbsp sugar

  • 2 tbsp butter

  • 1/2 cup basic leaves, chopped

  • 1 tbsp parsley, chopped

  • Optional: grated cheese of choice

method:

Blitz onion, garlic and chilli until finely chopped.

Heat oil in a saucepan, then fry blitzed vegetables.Once onions start to soften, add tomatoes, stock, half the basil leaves, and simmer, uncovered, 15 min.

Meanwhile cook and drain pasta according to packet instructions. Add 1 tbsp butter so pasta doesn't stick to itself.

Add sugar to the sauce, season with salt and pepper. Remove from heat, add remaining basil, the parsley and butter.
