potato gnocchi

ingredients:

(serves 4)

  • 1kg potatoes, peeled and diced

  • 1 egg

  • 1 cup flour

  • 2 tsp salt

method:

Cook the potatoes with 1 tsp salt for 15 min. Drain and set aside to cool a little.

Mash the potatoes, and mix in the four, egg, and remaining 1 tsp salt.

Take 1/4 of the mix and roll it out into a 2cm thick rope. Do the same with the rest of the dough. Cut dough into gnocchis of desired size.

Fry or cook gnocchi for 2-4 min.


* Recommend these are tried with coriander jalapeño pesto.
