potato leek soup

ingredients:

(serves 4)

  • 1 onion, chopped

  • 1 garlic clove, chopped

  • 2 leeks, chopped

  • 2 carrots, chopped

  • 1 parsnip, chopped 

  • 4 large potatoes (ca. 500g), diced

  • 5 cups vegetable stock

  • Olive oil, salt, pepper

  • Optional: bacon, for crumble


method:

Heat olive oil in soup pot, sautée onion, garlic, leeks, carrots and parsnip, 10-15min.

Add stock and potatoes, bring to a simmer, cover with lid and cook 15-20min.

Remove soup from heat, use a blender to purée it to desired consistency, then season to taste with lots of salt and pepper.

* Optional addition: Fry bacon in a pan until it is very crisp, and crumble it onto each soup serving.
