potato & runner bean medley

ingredients:

(serves 4)

  • 1kg potatoes, diced

  • 4 eggs, hardboiled

  • 400g runner beans

  • 12-15 sliced bacon

  • 1 dry onion, chopped

  • 1 zucchini, diced

  • 1 garlic clove, minced

  • salt, pepper olive oil


method:

Boil potatoes with a little salt until soft, 15-20 min. Drain, then set aside.

Meanwhile, boil runner beans with a little salt until softened, 6-8 min. Drain and add to the potatoes.

Fry bacon until crisp, and place on paper towels to soak excess fat. Meanwhile, fry the onion in the same pan. Once soft, add the garlic. Once aromatic, add the zucchini. Season with salt and pepper, and fry until soft and cooked through, ca. 5 min. Add contents of pan to potatoes.

Shred bacon and add to the potatoes.

Season with a little salt, pepper and olive oil.

Peel eggs, quarter, and add to each plate.
