300g king prawns
2 garlic cloves, minced
3 slices bread, diced to 1cm
1 large zucchini, diced
200g frozen peas or runner beans
handful cherry tomatoes, halved
1/2 tsp chili flakes
juice from 1/2 lime
olive oil, salt, pepper
method:
Heat oven to 100°C.
Heat a little oil in a large frying pan on medium-high heat. Add half the minced garlic and, once aromatic, the bread. Fry until golden and crispy. Pour into a baking tray lined with baking paper, season with salt and pepper, and bake 15 min.
Add some oil back into the pan on medium-high heat. Add remaining garlic mince and, once aromatic, the zucchini. Season with salt and a little pepper.
Meanwhile, boil the runner beans/peas for 5 min before draining and adding to the frying pan.
Add the prawns and season with salt and chili flakes.
After 2-3 min, extinguish with lime juice. Remove pan from heat, add cherry tomatoes and the croutons, mix well and drizzle with a little olive oil. Ready!
