salmon with mild spice rub

(serves 2)

  • 2 salmon filets, 200g each

  • 1/2 tsp curry powder

  • 1/2 tsp paprika

  • 1/2 tsp ground cumin

  • salt (1/3 - 1/2tsp)

  • pinch of pepper

  • olive oil


Preheat oven to 220°C.

Grease a pyrex dish with some olive oil.

Pour a little olive oil over over the salmon.

Combine the spices, salt and pepper, and sprinkle over the salmon.

Cook uncovered for 10 min, then cover the dish with its lid or some aluminium foil, and cook 5 more min.

Serve with rice and veggies.
