sausage & potato medley

1 kg potatoes, peeled and diced
1 broccoli, chopped
4 strands bacon, chopped
1 onion, chopped
300g sausages (suggest Nürnberg or Bratwurst), chopped
3 celery sticks, chopped
3 Polish dill pickles
1/2 cup chopped parsley
olive oil, salt, pepper
Boil potatoes for 15 min in salted water, then drain. Meanwhile steam broccoli for 10-15 min until it is soft but not falling apart (if you have a stackable steamer, you could be boiling the potatoes in the bottom pot while steaming your broccoli over them).
Add potatoes to salad bowl, add parsley and mix. Add broccoli to bowl.
Fry bacon in a pan, then drain on kitchen paper. Shred and add to bowl.
In the same pan, fry sausages, drain on kitchen paper and add to bowl.
In the same pan, fry onion. Once soft, add celery and pickles. Remove from heat and add to bowl.
Drizzle with olive oil, salt and pepper.
