simple shrimp-&-feta tomato sauce on rice ('saganaki'-style)

ingredients:

(serves 2)

  • 1 garlic clove, chopped

  • 400g prawns of choice

  • 4 large tomatoes, chopped, or 200g tomato sauce

  • 200ml vegetable stock

  • 100g feta, crumbled

  • 1 tbsp oregano

  • coarse black pepper

  • 125g white rice

method:

Cook rice according to packet instructions.

Heat a little olive oil in a saucepan and fry the garlic. Once aromatic, add tomatoes and cook until they are broken down into a sauce. Add vegetable stock and oregano, mix well and cook on medium-high heat, uncovered, 5min. Add shrimp and continue to cook for another 5min. Turn off heat, add feta, season with pepper, and allow feta to melt a little and blend into the sauce before serving. 

Serve sauce on rice.

* Alternate option: serve with bread for dipping instead of rice
