spaghetti aglio e olio

ingredients:

(serves 2)

  • 250g spaghetti

  • 1 garlic clove, pressed

  • 4 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp grated lemon zest

  • 2 tbsp chopped parsley

  • freshly ground black pepper, salt

* Optional: grated cheese

* Optional: chili flakes


method:

Boil spaghetti in a pot with 1 tsp salt, for 1-2min less than packet instructions. Drain and set aside.

Return emptied pot to very low heat, and add the olive oil. Simmer the garlic until aromatic, then add the pasta and mix well so that it is coated in the olive oil. Add lemon juice, zest, parsley, pepper, and season to taste with salt.

Eat as is, or with grated cheese and/or chili flakes.
