* This recipe uses a mix of bacon and ham, for a slightly leaner version.
Feel free to change that to 300g bacon and no ham, or using only ham and no bacon.
ingredients:
(serves 4)
* 150g bacon or pancetta, diced
* 150g ham of choice, diced
2 small onions, finely chopped
3 garlic cloves, minced
1 tsp cayenne
1/2 tsp smoked paprika
6 large tomatoes or 8 small-medium, blitzed
olive oil, salt, pepper
2 tbsp chopped parsley
500g spaghetti
grated hard yellow cheese
method:
Heat oil in pot on high heat. Fry bacon and ham for 3-5 min until it starts to stick to the bottom of the pot.
Lower heat to medium-low and add onion. Once translucent, add the garlic, cayenne, and smoked paprika, and mix well. Once aromatic from the garlic (some 2-3 min), add the tomato sauce. Simmer for 10 min, uncovered. Season to taste with salt and pepper.
Meanwhile cook pasta for 1 min less than packet instructions.
Drain pasta, and add to the sauce, allowing it to finish cooking in the sauce.
Add parsley, mix well, season to taste if needed, and remove from heat.
