spaghetti with veggie sauce

(serves 4)

  • 1 large onion

  • 1 red bell pepper

  • 2 medium zucchini, diced

  • 250g champignons, thickly sliced

  • 1 garlic clove, minced

  • 400g tomato sauce

  • 12-15 black pitted olives

  • 2 tbsp chopped basil

  • 500g spaghetti, or other pasta of choice

  • salt, pepper

* Optional: grated cheese of choice

* Optional: 1 tbsp butter


Blitz onion and bell pepper.

Heat 1 cup water in a saucepan, and simmer the blitzed onion-pepper mix for 2-3 min.

Add the zucchini and mushrooms, and simmer, covered, 10 min.

Add the garlic. Once aromatic, add the olives and tomato sauce and only a little salt and pepper. Cook on high heat, uncovered, 10 min, until excess liquids have evaporated and the sauce isn't as runny.

Meanwhile cook pasta according to packet instructions.

Remove sauce from heat. Add basil, butter, and season to taste with salt and pepper.
