1 large sweet potato, diced
2 onions, cut into 8ths
1/2 tsp garlic powder
olive oil, salt, pepper
500g linguine
4 tbsp home-made pesto: recommend rucola lemon pesto, parsley pesto or coriander jalapeño pesto
Optional: 8 slices bacon, diced
method:
Preheat oven to 220°C.
Toss sweet potato and onion in some olive oil, salt (ca. 1/2 tsp), pepper, and the garlic powder. Roast 30min.
Fry bacon until crispy, set aside.
Cook pasta according to packet instructions. Drain, coat in pesto of choice, add roasted veggies and bacon on top.
