the 'greekest' potatoes - with olives, capers & feta

(serves 4)

  • 1.5kg potatoes, diced

  • 2 onions, diced

  • 2 garlic cloves, minced

  • 1/2 cup pitted black olives

  • 2 tbsp capers

  • 2 tbsp chopped parsley

  • 400g tomato sauce

  • olive oil, salt, pepper

  • 1 laurel leaf

  • 1 tbsp oregano

  • 100g grated feta


Heat a little olive oil in a pan. Fry onions until soft. Add garlic, olives, capers, and parsley.

Add the potatoes, season with a little salt (ca. 1/2 tsp), and pepper, then add the tomato sauce and 300ml water. Simmer, covered, 30 min.

Add oregano and feta, and simmer, uncovered, 5 min.

Season to taste with a little more salt and pepper if needed.
