german potato soup

ingredients:

(serves 4)

  • olive oil, salt, pepper

  • 1 onion, chopped

  • 1 celery stick, chopped

  • 1/2 leek, chopped

  • 1-2 carrots, chopped

  • 1 kg potatoes, diced

  • 1/2 tbsp marjoram

  • 750ml vegetable stock

  • 1 tbsp chopped parsley

  • 4 frankfurters, sliced

* For a vegetarian version, just leave out the frankfurters


method:

In a soup pot fry the onion, celery stick, leek and carrots until the onion turns translucent.

Add potatoes, marjoram, a little pepper and season generously with salt. Add stock and simmer, covered, 20 min. Check potatoes are soft, if not then cook 5-10 min more.

Remove soup from heat. Blitz soup until it has the desired consistency. Add parsley.

Fry frankfurters lightly and serve soup with a few tbsp of sliced frankfurters on top.
