shrimp, veggie & feta sauce on rice ('saganaki'-style)

A slight level-up from simple shrimp-&-feta tomato sauce on rice -same recipe with a few more ingredients to enrich the sauce a little more :-)

ingredients:

(serves 2)

  • 2 garlic cloves, chopped

  • 1 onion, diced

  • 1 carrot, diced

  • 400g prawns of choice

  • 200g tomato sauce

  • 125ml vegetable stock

  • 100g feta, crumbled

  • 1 tsp oregano

  • olive oil, salt, pepper

  • 125g rice

method:

Heat a little olive oil in a saucepan and fry onion and carrot until soft, ca. 5min.

Add garlic and, once aromatic, add the vegetable stock, tomato sauce, oregano, 1/2 tsp salt, and a little pepper. Cook on medium-high heat, uncovered, 10min.

Add shrimp and continue to cook for another 10min.

Meanwhile, cook rice according to packet instructions. Set aside.

Remove sauce from heat, add feta, and season with to taste with salt and pepper if needed. Allow the feta to melt a little and blend into the sauce before serving with the rice.
